Cheese Salsa of Mango and Cucumber


Have this easy to prepare snack with a bowl of your favorite soup.Enjoy this dip with the homemade tortilla chips.


Serves: 16


Ingredients

Mango: ripe: peeled: diced: 3
Cucumber: medium: peeled: seeded: diced: 1
Red onion: small: diced: 1
Red bell pepper: small: seeded: diced: 1
Cilantro: fresh: chopped: ¼ cup
Garlic clove: 1
Lime juice: 1 tbsp
Salt and pepper to taste
Jalapeño pepper: seeded: finely chopped: 1 (optional)
Cottage cheese: with chives and onions: 2 tsp
Dill: ¼ tsp
Lettuce leaves: 2
Smoked salmon: 4 slices
Crisp bread: I slice


Method

• Place a crisp bread slice on a plateMix together mango, cucumber, onion, pepper, cilantro, and garlic. (add Jalapeno, if desired)
• Season to taste with lime juice, salt, and pepper..
• Arrange lettuce leaves on the bread.Refrigerate two hours prior to serving.

Additional Recipe Information:

• Nutritional information per serving: 3 mg sodium, 36 calories, 0 g cholesterol, 9 g carbohydrate, 1 g protein and trace of fat
• Place two spoons of cottage cheese on the lettuce leaves.
• Top this with four smoked salmon slices.
• Garnish the crisp bread with a sprinkling of dill.

    • How does this recipe serve 16 people? One slice of bread, 4 slices smoked salmon? Not sure the math is right here. Please explain.
