Beans and Beef


A quick beans and beef recipe that is great over mashed potatoes or a whole-grain tortilla.


Preparation time: 20 minutes

Cooking time: 30 minutes

Serves: 4


Ingredients


Ground beef: lean: 1 pound

Water: ¼ cup

Red bell pepper: large: 1: chopped

Chili powder: 1 tbsp

Garlic cloves: chopped: 6

Cumin: ground: 2 tbsp

Green salsa/ taco sauce/ green enchilada sauce: 16 ounce

Cayenne pepper: ¼ tsp

Pinto beans/ kidney beans: rinsed: 15 ounce


Method


  • Stir onions, bell pepper and beef together in a saucepan and cook them for approximately 10 minutes, or till meat browns.
  • Crumble the meat while cooking.
  • To this, add chili powder, garlic, cayenne pepper and cumin till they emit a fragrance (which will take approximately 15 seconds).
  • Add salsa and water and simmer for 15 minutes or until the vegetables become soft.
  • Add the beans and continue cooking until beans are heated through.

    • Sounds great, in method it says "stir onions" but there are no onions listed in the ingredients-what oonions? Roady
