Zesty Pasta
This pasta and salsa dish combines flavors of tomatoes and spicy jalapeno peppers.
Cooking time: 20 minutes
Serves: 4
Ingredients
Extra-virgin olive oil: 1 tbsp
Whole wheat Pasta: 2 cups
Whole-grain orzo: ½ cup
Vegetable or chicken broth: low sodium: 2 cups
Onion (red or white): small: chopped finely: 1
Plum tomatoes: halved, deseeded and diced: 4
Jalapeno pepper: deseeded and chopped finely: 1
Lime: zested and juiced: 1
Cilantro leaves: finely chopped: handful: ½ cup
Salt: to taste
Method
- Place a saucepan over medium flame.
- Add olive oil and heat.
- Transfer orzo to the saucepan and toast till it gets a rich golden color.
- Add pasta and broth and heat to boiling.
- Lower the heat and place a lid over the pan while it simmers for approximately 20 minutes.
- Drain.
- Mix onion, plum tomatoes, jalapeno, cilantro, lime juice and zest into large bowl.
- Add salt to taste.
- Toss the pasta with salsa before serving.
