Citrus and Avocado Salad with Mint


This quick salad provides lots of fiber and heart-healthy fat.


Serves: 4


Ingredients


Seedless orange: medium: 2

White Grapefruit: medium: 1

Avocado: small: 1

Extra-virgin olive oil: 3 tbsp

Salt: 1/8 tsp

Fresh mint leaves: finely shredded: 8

Romaine lettuce: large leaves: shredded: 4


Method


  • Peel oranges and slice into half-circles.
  • Peel grapefruit and remove all of the white membrane.
  • Slice the grapefruit into quarter-circles.
  • Place the oranges and grapefruit into shallow salad bowl.
  • Peel avocado and slice into half-circles; immediately add to bowl of fruit.
  • Add the olive oil, salt, and shredded mint, and toss.
  • Place the romaine lettuce leaves on top and refrigerate. Toss again when ready to serve.
